HACCP(Hazard Analysis Critical Control Point)是用于对某一特定食品生产过程进行鉴别评价和控制的一种系统方法。国际食品法典委员会(CAC)认为HACCP是迄今为止控制食源性危害的最经济、最有效的手段,近年来,HACCP已在全球得到了广泛推广。那么,我国食品企业采纳HACCP管理体系的情况如何?实施该管理体系时遇到的障碍因素有哪些?本文通过问卷调查,对HACCP体系在我国食品企业中的实施现状进行了分析,并提出了该管理体系在我国推广和扩散的政策建议。
Abstract：HACCP is a systematic method to identify,evaluate and control a specific food production process.CAC takes HACCP as the most economical and effective tool to prevent food-borne hazards nowadays.In recent years,HACCP has implemented throughout the world.In the more and more strict international business situation,what about China's food industry adopting HACCP? Which kinds of barriers will influence the industries to implement the system? Based on the survey of China's food firms,the author analyzes the situation of firms adopting HACCP and some suggestions about diffusing the system are put forward.
